Method

Fried Fish & Shrimp

1

Prepare the Fish and Shrimp

Rinse the fish fillets and shrimp under cold water. Pat dry with paper towels.

2

Prepare the Breading

In a shallow bowl, mix together flour, cornmeal, salt, black pepper, and cayenne pepper. In another bowl, whisk together eggs and milk.

3

Dredge the Fish and Shrimp

Dip the fish fillets and shrimp first into the egg mixture, then coat with the flour-cornmeal mixture.

4

Fry the Fish and Shrimp

Heat vegetable oil in a deep skillet over medium-high heat. Fry the fish fillets for about 4-5 minutes per side until golden brown, and shrimp for about 2-3 minutes until they turn pink. Drain on paper towels.

Hush Puppies

5

Mix Ingredients

In a bowl, combine cornmeal, flour, baking powder, sugar, and salt. In another bowl, mix together egg and milk, then stir in the green onions.

6

Combine and Fry

Mix wet ingredients into dry until just combined. Drop spoonfuls of batter into hot oil and fry until golden brown, about 3-4 minutes. Drain on paper towels.

Tartar Sauce

7

Mix Tartar Sauce

In a bowl, combine mayonnaise, dill pickles, lemon juice, capers (if using), salt, and pepper. Mix well and refrigerate until serving.

Cocktail Sauce

8

Mix Cocktail Sauce

In a bowl, mix together ketchup, horseradish, lemon juice, and Worcestershire sauce. Adjust seasoning to taste.

Fries

9

Prepare the Fries

Soak cut potatoes in cold water for 30 minutes. Drain and pat dry. Heat oil in a deep fryer and fry the potatoes in batches until golden brown, about 5-7 minutes. Drain on paper towels and sprinkle with salt.
