Make the Crab Cakes
In a large mixing bowl, combine the blue crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, bread crumbs, egg, salt, and black pepper. Mix gently until well combined, being careful not to break up the crab meat too much.

Form the Crab Cakes
Shape the mixture into patties, about 3 inches in diameter. You should get about 4-6 crab cakes depending on the size.

Broil the Crab Cakes
Preheat the broiler. Place the crab cakes on a greased baking sheet. Brush the tops with olive oil. Broil for about 5-6 minutes on each side, or until golden brown.

Prepare the Sandwich
While the crab cakes are broiling, slice the brioche rolls and toast them lightly if desired. Add lettuce and tomato slices to the bottom half of the roll.

Assemble
Once the crab cakes are done, place one on each sandwich, top with remoulade sauce, and close the sandwich with the top half of the roll.
