Prepare the Beans
Rinse the dried black beans under cold water to remove any debris. In a large pot, combine the beans and water. Bring to a boil over high heat.
Cook the Beans
Reduce the heat to low, cover, and let the beans simmer for about 1.5 to 2 hours, or until they are tender. Stir occasionally and add more water if needed to keep the beans submerged.
Season the Beans
Once the beans are tender, stir in salt, black pepper, and olive oil. Adjust seasoning to taste.
Serve
Scoop the beans into bowls, top each serving with shredded cheddar cheese and chopped green onions if desired. Serve hot.
