Prepare the Beef

Cut the sirloin beef into bite-sized tips and season with salt and black pepper.

Chop the Vegetables

Chop the carrots, potatoes, onion, celery, and mince the garlic.

Sear the Beef

In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef tips and sear on all sides until browned, about 5-7 minutes. Remove the beef and set aside.

Sauté the Vegetables

In the same pot, add the chopped onion, garlic, carrots, and celery. Sauté for about 5 minutes until the vegetables begin to soften.

Add Liquids and Seasoning

Pour in the Guinness beer and beef broth, scraping the bottom of the pot to deglaze. Add the thyme, bay leaves, and return the beef to the pot.

Add Potatoes

Add the cubed potatoes to the pot and stir well to combine.

Simmer

Bring the stew to a boil, then reduce the heat to low. Cover and let it simmer for about 1.5 to 2 hours, or until the beef is tender.
