    Caramelize the Onions

    In a skillet, heat olive oil over medium heat. Add sliced onions and a pinch of salt. Cook, stirring occasionally, for about 15-20 minutes until the onions are soft and caramelized.

    Prepare the Patties

    Divide the ground beef into two equal portions (about 1/2 pound each). Form them into loose balls and season with salt and black pepper.

    Cook the Burgers

    Heat a cast-iron skillet or griddle over high heat. Place the beef balls on the skillet and smash them down with a spatula to create a thin patty. Cook for about 3 minutes until a crust forms, then flip the patties. Immediately place a slice of American cheese on each patty and cook for an additional minute until the cheese melts.

    Toast the Buns

    While the burgers are cooking, cut the brioche buns in half and toast them in a separate skillet or under the broiler until golden brown.

    Assemble the Burger

    On the bottom half of each toasted bun, layer the caramelized onions, burger patty with melted cheese, sliced tomatoes, and your choice of house sauce. Top with the other half of the bun.

    Serve

    Serve the smash burgers immediately with a side of fries.
