Prepare the Fish

Preheat a skillet over medium-high heat. Rub the Mahi Mahi fillets with olive oil and coat them with blackening spice. Once the skillet is hot, add the fillets and cook for about 3-4 minutes on each side, or until the fish is cooked through and has a nice blackened crust. Remove from heat and let it rest.

Make the Slaw

In a bowl, combine the grated carrots, sliced radishes, chopped cilantro, and lime juice. Mix well and set aside to let the flavors meld.

Warm the Tortillas

In a separate skillet or on a griddle, warm the corn tortillas over medium heat for about 30 seconds on each side until they are pliable.

Assemble the Tacos

Flake the blackened Mahi Mahi into bite-sized pieces. Place a portion of the fish on each tortilla, top with Aji Verde sauce and the carrot-radish slaw.

Serve

Serve the fish tacos with tortilla chips and salsa on the side.
