Prepare the Shrimp
In a bowl, toss the shrimp with taco seasoning and set aside.
Caramelize the Onion and Pepper
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and bell pepper, cooking until softened and caramelized, about 10 minutes. Remove from skillet and set aside.
Cook the Shrimp
In the same skillet, add the remaining tablespoon of olive oil. Add the seasoned shrimp and cook for about 2-3 minutes on each side, or until they are pink and opaque. Remove from heat.
Assemble the Quesadilla
On one half of each tortilla, layer some pepper jack cheese, the caramelized onion and pepper mixture, and cooked shrimp. Top with more cheese and fold the tortilla over.
Cook the Quesadilla
Wipe the skillet clean and return to medium heat. Cook each quesadilla for 3-4 minutes on each side, or until the tortillas are golden brown and the cheese is melted. Repeat with remaining tortillas.
Serve
Cut the quesadillas into wedges and serve warm with salsa, guacamole, and sour cream on the side.
