Preparation of Crispy Mac & Cheese Bites
Prepare the Mixture
In a large bowl, combine the cooked macaroni, cheddar cheese, cream cheese, crumbled bacon, egg, salt, and black pepper. Mix until all ingredients are well combined.
Form the Bites
Using your hands, form the mixture into small balls, about 1 inch in diameter. Place each ball on a baking sheet lined with parchment paper.
Roll each ball in bread crumbs until fully coated, then place them back on the baking sheet.
Chill the Bites
Refrigerate the baking sheet for at least 30 minutes to help the bites firm up.
Fry the Bites
In a large skillet, heat olive oil over medium heat. Fry the mac and cheese bites in batches until golden brown and crispy, about 3-4 minutes per side.
Drain and Serve
Remove bites from the skillet and drain on paper towels. Serve warm with bacon aioli.
