    Prepare the Steak

    Season the steak with salt and black pepper. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Sear the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let it rest for 5 minutes before slicing.

    Char the Scallions

    In the same skillet, add the remaining tablespoon of olive oil and add the scallions. Cook for 2-3 minutes until they are charred and tender. Remove from heat.

    Assemble the Flatbreads

    On each piece of flatbread, spread half of the onion marmalade. Layer the sliced steak on top, followed by the charred scallions, blue cheese, and arugula.

    Finish with Balsamic Glaze

    Drizzle balsamic glaze over the assembled flatbreads to taste.

    Serve

    Cut the flatbreads in half and serve immediately.
