Prepare Dumplings

    Mix Filling

    In a mixing bowl, combine ground chicken, chopped green onions, minced garlic, minced ginger, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are thoroughly combined.

    Fill Wontons

    Take a wonton wrapper and place about 1 teaspoon of the chicken mixture in the center. Moisten the edges of the wrapper with water using your finger. Fold the wrapper in half to form a triangle, pressing to seal. Bring the two corners of the triangle together and pinch to seal tightly. Repeat with remaining wrappers and filling.

Prepare Soup

    Cook Vegetables

    In a large pot, bring chicken broth to a boil. Add sliced carrots and mushrooms to the boiling broth and let cook for about 5 minutes until slightly tender.

    Add Dumplings and Greens

    Carefully add the dumplings to the pot. Let them cook for about 5-7 minutes until they float to the top, indicating they are cooked through. Add spinach or bok choy and cook for an additional 2-3 minutes until wilted.

    Add Optional Ingredients

    If using tofu or shrimp, add them to the pot and allow to simmer for another 3-5 minutes until heated through.

    Serve

    Ladle the soup into bowls and garnish with additional chopped green onions. Serve hot.
