    Prepare the Duck

    In a large pot, combine the duck legs, duck fat, salt, black pepper, thyme, and garlic. Make sure the duck legs are fully submerged in the fat.

    Cook the Duck

    Cover the pot and cook on low heat for 2 to 3 hours, or until the duck is tender and falling off the bone. Let it cool in the fat.

    Shred the Duck

    Once cooled, remove the duck legs from the fat and shred the meat, discarding the skin and bones. Reserve 2 cups of shredded meat for the fried rice.

Fried Rice Preparation

    In a large skillet or wok, heat the vegetable oil over medium-high heat.

    Add the diced onion and carrots to the skillet, sautéing for about 3-4 minutes until they are tender.
