House-made Marinara Sauce

Crispy Calamari

Prepare the Calamari
Clean the calamari by removing the head and innards. Cut the bodies into rings about 1/2 inch thick.

Marinate
Place the calamari rings in a bowl and cover with buttermilk. Let them marinate for at least 30 minutes in the refrigerator.

Prepare the Coating
In a separate bowl, mix together the flour, cornstarch, salt, black pepper, garlic powder, and paprika.

Heat the Oil
In a deep skillet or fryer, heat the vegetable oil to 375°F (190°C).

Coat the Calamari
Remove the calamari from the buttermilk, allowing excess to drip off. Dredge the rings in the flour mixture until evenly coated.

Fry the Calamari
Carefully place the coated calamari in the hot oil in batches, frying for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Add Tomatoes and Spices
Stir in the crushed tomatoes, oregano, basil, salt, black pepper, and sugar. Bring to a simmer.

Simmer the Sauce
Reduce heat and let the sauce simmer for 20-25 minutes, stirring occasionally, until thickened.

Finish the Sauce
Stir in the chopped fresh parsley just before serving.
