    Prepare the Ingredients

    Wash and peel the carrots, then chop them into bite-sized pieces. Peel and slice the onions into thin rings. Peel the garlic cloves and minced them. Peel and slice the ginger into thin strips.

    Cook the Beef Tendons

    In a large pot, add the beef broth and beef tendons. Bring to a boil over high heat, then reduce to a simmer. Skim off any foam that rises to the surface. Cover and let simmer for about 1.5 to 2 hours, or until the tendons are tender.

    Add Vegetables and Seasoning

    Once the tendons are tender, add the chopped carrots, sliced onions, minced garlic, sliced ginger, fish sauce, sugar, black pepper, and salt. Stir well to combine all the ingredients. Cover and let it simmer for another 30 minutes, or until the carrots are soft.

    Garnish and Serve

    Ladle the beef stew into bowls. Garnish with fresh cilantro and chopped green onions. Serve hot with rice or crusty bread.
