Method

Preparation

  1. 1

    Prepare the Noodles

Cook the rice noodles according to package instructions until al dente. Drain and set aside.

  2. 2

    Prepare the Tofu

Press the tofu to remove excess moisture, then cut into small cubes.

  3. 3

    Prep the Vegetables

Julienne the carrot and slice the red bell pepper and green onions.

Cooking

  1. 4

    Fry the Tofu

In a large frying pan or wok, heat the vegetable oil over medium-high heat. Add the cubed tofu and cook until golden brown, about 5-7 minutes.

  2. 5

    Add Eggs

Push the tofu to one side of the pan, crack the eggs into the empty side, and scramble until fully cooked.

  3. 6

    Combine Ingredients

Add the drained rice noodles, bean sprouts, carrots, and red bell pepper to the pan. Stir-fry for an additional 3-4 minutes.

  4. 7

    Make the Sauce

In a small bowl, whisk together the soy sauce, tamarind paste, brown sugar, and Sriracha sauce. Pour over the noodles and toss to combine.

  5. 8

    Serve

Serve the Pad Thai hot, garnished with chopped peanuts and lime wedges.
