Prepare the Rice

    Cook the Rice

    In a medium saucepan, combine 1 cup of white rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.

Prepare the Beef

    Marinate the Beef

    Cut the filet mignon into bite-sized cubes. In a bowl, combine the soy sauce, minced garlic, black pepper, vegetable oil, and sesame oil. Add the beef cubes and toss to coat. Let marinate for at least 15 minutes.

    Cook the Beef

    In a large skillet or wok over high heat, add a tablespoon of vegetable oil. Once hot, add the marinated beef cubes in a single layer. Cook for 2-3 minutes without stirring to allow a sear to form. Then stir-fry until the beef is browned and cooked to your desired doneness, about 2-3 more minutes. Remove from heat.

Prepare the Salad

    Mix the Salad

    In a large bowl, combine the spring mix salad greens, halved cherry tomatoes, and sliced cucumber. In a small bowl, whisk together olive oil, balsamic vinegar, and salt. Drizzle the dressing over the salad and toss to combine.

Serve

    Plate the Dish

    On each plate, serve a portion of the steamed rice, top with the cooked shaking beef, and add a side of the fresh salad. Enjoy your meal!
