Prepare the Dumplings

Mix Filling
In a large bowl, combine the ground chicken, chopped scallions (reserve some for garnish), minced garlic, grated ginger, soy sauce, sesame oil, salt, and black pepper. Mix until fully combined.

Fill Dumpling Wrappers
Take a dumpling wrapper and place about 1 tablespoon of the chicken mixture in the center. Moisten the edges with water, fold the wrapper over to create a half-moon shape, and press to seal. Repeat until all filling is used.
Cook the Dumplings

Sauté Dumplings
In a large skillet, heat 1 tablespoon of oil over medium heat. Add the dumplings in a single layer and cook for about 3-4 minutes, or until the bottoms are golden brown.

Steam Dumplings
Add 1/4 cup of water to the skillet and cover immediately. Let it steam for 5-6 minutes or until the chicken is cooked through.

Remove and Garnish
Remove the lid and let the dumplings cook for an additional minute to crisp up the bottoms. Transfer to a plate and garnish with remaining scallions.

In a small bowl, whisk together the soy sauce, rice vinegar, lime juice, chili oil, and sugar until well combined.
