Prepare the Shrimp
Rinse the peeled and deveined shrimp under cold water and pat dry with paper towels. Season with salt and black pepper.

Chop Shallots and Tomatoes
Finely chop the shallots and slice the cherry tomatoes in half.
Cooking

Sauté Shallots
In a large skillet, heat the olive oil over medium heat. Add the chopped shallots and sauté for about 2-3 minutes until they are translucent.

Cook the Shrimp
Add the seasoned shrimp to the skillet and cook for 2-3 minutes on one side until they turn pink. Flip the shrimp and cook for an additional 1-2 minutes.

Add Sambuca and Tomatoes
Pour the Sambuca into the skillet, allowing it to flambé if desired for extra flavor. Add the halved cherry tomatoes, stirring gently to combine.

Plate the Dish
Remove the skillet from heat. Serve the Sambucca shrimp immediately, garnished with fresh parsley.
