Method

Preparation

  1. 1

    Prepare the Steak

Remove the ribeye steak from the refrigerator and let it sit at room temperature for 30 minutes before cooking. This ensures even cooking.

  2. 2

    Season the Steak

Generously season both sides of the ribeye steak with salt and black pepper, rubbing it into the meat for better flavor.

  3. 3

    Prepare Aromatics

Peel and crush the garlic cloves and set them aside. Rinse the fresh rosemary and have it ready for cooking.

Cooking

  1. 4

    Heat the Pan

In a large cast-iron skillet, heat the olive oil over medium-high heat until it begins to shimmer.

  2. 5

    Sear the Steak

Carefully place the ribeye steak in the hot pan. Sear for about 4-5 minutes without moving it to develop a crust.

  3. 6

    Flip the Steak

Using tongs, flip the steak and add the crushed garlic cloves, rosemary sprig, and butter to the pan.

  4. 7

    Baste the Steak

Tilt the pan slightly and use a spoon to baste the melted butter over the steak continuously for another 4-5 minutes, or until it reaches your desired doneness (130°F for medium-rare, 140°F for medium).

  5. 8

    Rest the Steak

Remove the steak from the skillet and transfer it to a cutting board. Let it rest for at least 5 minutes before slicing.
