Preparation

    Cook the Rice

    If not using pre-cooked rice, cook rice according to package instructions and allow it to cool. Day-old rice works best for fried rice.

    Prepare the Vegetables

    Dice the carrots and slice the scallions. If using fresh peas, shell them. If using frozen peas, measure 1 cup.

    Prepare the Protein (optional)

    If using chicken, beef, shrimp, or salmon, ensure it is diced into small, bite-sized pieces. If using tofu, cube it into small pieces.

Cooking

    Heat the Pan

    In a large skillet or wok, heat sesame oil over medium-high heat.

    Cook the Protein

    If using protein, add it to the pan and cook until fully cooked through. Remove from the pan and set aside.

    Scramble the Eggs

    Crack the two eggs into the pan and scramble until fully cooked. Remove from the pan and set aside.

    Sauté the Vegetables

    Add the diced carrots and peas to the pan and sauté for about 2-3 minutes until they are tender.

    Combine Ingredients

    Add the cooked rice to the pan and stir to combine with the vegetables. Add soy sauce, salt, and pepper, stirring well to ensure everything is mixed.

    Reintroduce Protein and Eggs

    Add the cooked protein and scrambled eggs back to the pan. Stir everything together and cook for an additional 2-3 minutes until heated through.

    Finish with Scallions

    Add the sliced scallions and stir for another minute, then remove from heat.
