Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C).

  2. 2

    Prepare Ramekins

Grease four 6-ounce ramekins with butter and dust with flour. Tap out the excess flour and set aside.

Making the Cake Batter

  1. 3

    Melt Butter and Chocolate

In a microwave-safe bowl, combine the unsalted butter and bittersweet chocolate. Heat in the microwave in 30-second intervals, stirring in between, until fully melted and smooth.

  2. 4

    Mix in Sugar

Add the granulated sugar to the melted chocolate and butter mixture. Stir until combined.

  3. 5

    Add Eggs and Yolks

Add the large eggs and egg yolks one at a time, mixing well after each addition.

  4. 6

    Incorporate Dry Ingredients

Sift the all-purpose flour and salt into the batter. Add the vanilla extract. Fold gently until just combined, being careful not to overmix.

Baking the Cakes

  1. 7

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

  2. 8

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for about 12-14 minutes, or until the edges are set but the center is still soft.

  3. 9

    Cool Slightly

Remove the ramekins from the oven and let them cool for about 1 minute.

Serving

  1. 10

    Plate and Serve

Carefully invert each ramekin onto a plate. Dust with powdered sugar and serve immediately with a scoop of vanilla ice cream.
