Method

For the BBQ Pork

    Marinate the Pork

    In a bowl, combine soy sauce, brown sugar, minced garlic, black pepper, five-spice powder, and vegetable oil. Mix well.

    Prepare the Pork

    Add the pork shoulder to the marinade, ensuring it is fully coated. Cover and refrigerate for at least 2 hours, preferably overnight.

    Cook the Pork

    Preheat the grill or oven to 180°C (350°F). Grill or roast the marinated pork shoulder until fully cooked and slightly charred, about 1.5 to 2 hours. Let it rest before slicing.

For the Pickled Veggies

    Prepare the Pickling Solution

    In a bowl, whisk together rice vinegar, sugar, and salt until the sugar dissolves.

    Pickle the Vegetables

    Add the julienned carrots and daikon radish to the pickling solution. Let them sit for at least 30 minutes, or refrigerate for a few hours for more flavor.

For the Sandwich

    Assemble the Sandwich

    Slice the French rolls lengthwise without cutting all the way through. Spread a generous amount of aioli on both sides.

    Layer the sliced BBQ pork, pickled veggies, cucumber slices, and jalapenos inside the rolls.

    Serve the Banh Mi sandwiches fresh, alongside the fries.

For the Fries

    Prepare the Potatoes

    Soak the cut potatoes in water for at least 30 minutes to remove excess starch, then drain and pat dry.

    Fry the Potatoes

    Heat vegetable oil in a deep fryer or large pot to 180°C (350°F). Fry the potatoes in batches until golden and crispy, about 5-7 minutes. Remove and drain on paper towels.

    While still hot, sprinkle the fries with salt to taste.
