Prepare the Focaccia
Start by preheating your oven to 375°F (190°C). Place the slices of focaccia on a baking sheet and lightly brush them with olive oil.

Bake the Bread
Bake the focaccia slices in the preheated oven for about 5-7 minutes, or until they are slightly crispy and warmed through.

Prepare the Vegetables
While the bread is baking, slice the tomatoes, cucumbers, and red onion. If using whole roasted red peppers, slice them into strips.

Assemble the Sandwich
Once the focaccia is ready, remove it from the oven. Layer fresh spinach on each slice, followed by sliced tomatoes, cucumbers, red onion, and roasted red peppers.

Add Feta and Dressing
Crumble feta cheese over the top of the vegetables. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and black pepper. Drizzle the dressing over the open-face sandwiches.
