Sauté the Vegetables

In a large pot, heat olive oil over medium heat. Add chopped onion, diced carrots, and diced celery. Sauté for about 5 minutes until the vegetables are softened.

Add Garlic

Stir in the minced garlic and cook for an additional minute, until fragrant.

Combine Broth and Tomatoes

Pour in the vegetable broth and add the canned diced tomatoes. Bring the mixture to a boil.

Add Beans and Seasonings

Once boiling, add the drained beans, seasoned salt, black pepper, ground cumin, and chili powder. Reduce heat to low and let simmer for 20 minutes.

Finish and Serve

Stir in the chopped cilantro and lime juice just before serving. Taste and adjust seasoning if necessary. Serve hot.
