Prepare the coleslaw
In a large bowl, combine the shredded cabbage, carrot, mayonnaise, apple cider vinegar, sugar, salt, and pepper. Mix well and refrigerate for at least 30 minutes.

Prepare the fries
Peel and cut the potatoes into fries. Rinse under cold water, then soak in water for about 30 minutes. Drain and pat dry.

Make the batter
In a mixing bowl, whisk together the flour, cornstarch, baking powder, salt, and black pepper. Gradually add cold sparkling water until the batter is smooth and thick.

Fry the fish
Heat the vegetable oil in a deep fryer or heavy pot to 350°F (175°C). Dip each haddock fillet into the batter, allowing excess to drip off. Carefully place in the hot oil and fry until golden brown and cooked through, about 4-5 minutes. Remove and drain on paper towels.

Fry the fries
In the same oil, add the prepared fries in batches and fry until golden and crispy, about 5-7 minutes. Drain on paper towels and season with salt.

Plate the fried haddock alongside the crispy fries and serve with homemade coleslaw on the side.
