Roast the Cauliflower
Preheat the oven to 425°F (220°C). Cut the cauliflower into florets and toss with 1 tablespoon of olive oil, ancho chili powder, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden and tender.

Prepare the Sweet Potato
Peel and dice the sweet potato into cubes. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sweet potato and fry until crispy and cooked through, about 10-15 minutes. Season with salt and pepper.

Assemble the Burrito
Warm the tortillas on a skillet or in the microwave. Layer the roasted cauliflower, pinto beans, sautéed onion and poblano, fried sweet potatoes, and slices of avocado onto each tortilla. Roll up tightly to form burritos.

Serve
Cut the burritos in half and serve with extra ancho chili salsa on the side.
