    Prepare the Pork Loin

    Preheat your oven to 375°F (190°C). Rub the pork loin with olive oil, salt, and black pepper. Place it in a roasting pan and roast for about 1 hour, or until the internal temperature reaches 145°F (63°C). Let it rest for 10 minutes before slicing.

    Caramelize the Onions

    In a skillet over medium heat, melt the butter. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 15-20 minutes. Set aside.

    Prepare the Balsamic-Pork Jus

    In the same skillet, add the balsamic vinegar and chicken broth. Bring to a simmer, scraping up any bits from the bottom of the pan. Reduce the mixture for about 10 minutes until slightly thickened.

    Assemble the Melt

    Slice the ciabatta rolls in half. Layer each bottom half with sliced pork, caramelized onions, provolone cheese, fig compote, and arugula. Place the top half of the roll on each sandwich.

    Serve the sandwiches warm with a drizzle of the balsamic-pork jus over the top.
