    Peel the Russet potatoes and grate them using a box grater or food processor. Rinse the grated potatoes under cold water to remove excess starch, then drain and pat dry with paper towels.

    If using, finely chop the onion. You can add it to the grated potatoes for extra flavor.

    Heat the Oil

    In a large skillet, heat vegetable oil over medium heat until shimmering.

    Cook the Hashbrowns

    Add the grated potatoes (and onion if using) to the skillet in an even layer. Season with salt and black pepper. Cook without stirring for about 5-7 minutes or until the bottom is golden brown and crispy.

    Flip and Finish Cooking

    Using a spatula, carefully flip the hashbrowns in sections. Cook for another 5-7 minutes on the other side until crispy and golden.
