Instructions
1. Prepare the Aioli
In a bowl, combine mayonnaise, chopped basil, lemon juice, minced garlic, salt, and black pepper. Mix well and set aside.
2. Grill the Chicken
Preheat the grill to medium heat. Season the chicken breasts with salt and pepper. Grill for 6-7 minutes on each side or until fully cooked and juices run clear. Remove from grill and let rest for a few minutes.
3. Prepare the Fries
Cut the russet potatoes into fries. In a bowl, toss the cut fries with olive oil and salt. Place on a baking sheet and bake at 425°F (220°C) for 25-30 minutes or until golden brown, flipping halfway through.
4. Assemble the Sandwich
Slice the grilled chicken breasts and place them on the bottom half of the burger bun. Spread a generous amount of lemon basil aioli on top, add fresh arugula and sliced tomato. Top with the other half of the bun.
5. Serve
Serve the grilled lemon chicken sandwich with house cut fries on the side.
