Prepare the Fries
Begin by cutting potatoes into thick strips to create house-cut fries. Rinse them under cold water to remove excess starch and pat dry.
Fry the Potatoes
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Carefully add the potato strips in batches and fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt.
Make the Beer Batter
In a mixing bowl, combine all-purpose flour, baking powder, salt, and black pepper. Gradually whisk in the beer until the batter is smooth and thick.
Prepare the Cod
Pat the cod fillets dry with paper towels. Dip each fillet into the beer batter, ensuring they are well-coated.
Fry the Cod
In the same hot oil used for the fries, carefully add the battered cod fillets. Fry until golden brown and cooked through, about 4-5 minutes per side. Remove and drain on paper towels.
Serve
Plate the crispy cod fillets alongside the house-cut fries. Serve with tartar sauce and grilled lemon wedges.
