Mix Dry Ingredients
In a large bowl, whisk together the flour, baking powder, sugar, and salt until well combined.

Combine Mixtures
Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix; a few lumps are okay.

Cook Pancakes
Heat a non-stick skillet or griddle over medium heat. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook the other side until golden brown, about 1-2 minutes more.

Prepare Toppings
While pancakes are cooking, cook bacon in a separate skillet until crispy. Prepare any fresh fruit and toppings as desired.

Stack the pancakes on a plate, top with bacon and fresh fruit, and serve with your choice of maple bourbon butter & syrup, wildberry compote & whipped cream, or Nutella & banana.
