Preparation of Salmon

Marinate the Salmon

In a bowl, combine olive oil, lime juice, salt, and black pepper. Add the salmon fillets and marinate for at least 30 minutes.

Grill the Salmon

Preheat the grill to medium-high. Grill the marinated salmon for about 4-5 minutes on each side or until cooked through.

Prepare the Rice

In a saucepan, combine jasmine rice, water, coconut milk, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit covered for another 5 minutes.

Making Pineapple Mango Salsa

Mix the Salsa

In a bowl, combine diced pineapple, diced mango, red onion, cilantro, lime juice, and salt. Mix well and set aside.

Sautéing Vegetables

Sauté the Vegetables

In a skillet, heat olive oil over medium heat. Add bell peppers, zucchini, and carrots. Season with salt and pepper. Sauté for about 5-7 minutes until vegetables are tender.

Making the Vinaigrette

Prepare the Vinaigrette

In a small bowl, whisk together grated ginger, chopped cilantro, olive oil, rice vinegar, honey, and salt. Adjust seasoning to taste.

Plate the Dish

On a plate, serve a portion of fragrant rice, top with grilled salmon, garnish with pineapple mango salsa, sautéed vegetables on the side, and drizzle with cilantro ginger vinaigrette.
