Prepare Wildberry Compote

Make the Compote

In a medium saucepan over medium heat, combine the mixed berries, sugar, and lemon juice. Cook for about 10 minutes, stirring occasionally until the berries break down and the mixture thickens. Remove from heat and set aside.

Prepare French Toast

Prepare the Egg Mixture

In a shallow bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon until well combined.

Cook the Bacon

In a skillet over medium heat, cook the bacon slices until crispy. Remove from the skillet and drain on paper towels.

Toast the Brioche

In the same skillet, dip each slice of brioche bread into the egg mixture, allowing it to soak for a few seconds on each side. Cook the soaked brioche slices in the skillet until golden brown on both sides, about 3-4 minutes per side.

Assemble and Serve

Serve the French Toast

Place the cooked brioche French toast on a plate, top with wildberry compote, crispy bacon, and fresh fruit. Drizzle with maple syrup to taste.
