Prepare the Soup

Cook the Onions

In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown, about 30 minutes.

Add Garlic and Broth

Stir in the minced garlic and cook for another minute. Pour in the beef broth, white wine, thyme, salt, and pepper. Bring to a boil, then reduce heat and let simmer for 30 minutes.

Toast the Baguette

Preheat the oven to 400°F (200°C). Slice the baguette into 1-inch thick pieces. Brush both sides with olive oil and place on a baking sheet. Bake for about 10-12 minutes, until golden and crisp.

Combine and Bake

Ladle the soup into oven-safe bowls, place a toasted baguette slice on top of each bowl, and sprinkle with mozzarella and Swiss cheese. Place the bowls on a baking sheet and bake in the oven for about 15-20 minutes, until the cheese is bubbly and golden.
