Shellfish and Pasta

Method

Preparation and Cooking

  1. 1

    Prepare the Ingredients

Clean the mussels and clams under cold water, scrubbing the shells. Remove beards from mussels. Rinse scallops and pat dry. Chop onions, spinach, tomatoes, mushrooms, and fennel. Mince garlic.

  2. 2

    Cook the Linguine

In a large pot, bring water to a boil. Add salt and cook the linguine according to package instructions until al dente. Drain and set aside.

  3. 3

    Sauté Vegetables

In a large skillet or pan, heat olive oil over medium heat. Add onions and fennel, sautéing until soft. Add garlic and cook for an additional minute.

  4. 4

    Add Shellfish and Wine

Stir in the tomatoes, mushrooms, and spinach. Add mussels, clams, and scallops. Pour in the white wine and cover the pan. Cook for about 5-7 minutes, or until the shellfish have opened and scallops are opaque.

  5. 5

    Combine with Pasta

Add the cooked linguine to the skillet, tossing to combine with the shellfish and sauce. Season with salt and black pepper to taste.

  6. 6

    Serve

Serve immediately, garnished with fresh herbs if desired.
