    Prepare the Seafood

    In a medium saucepan, melt butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add shrimp, bay scallops, and surimi crab; cook for about 3-5 minutes until the seafood is just cooked through. Remove from heat and set aside.

    Make the Lobster Cream Sauce

    In the same saucepan, add flour to the remaining butter and whisk for 1-2 minutes to create a roux. Gradually whisk in the heavy cream and lobster stock, cooking until the sauce thickens, about 5 minutes. Season with salt, black pepper, and paprika.

    Combine and Assemble

    Stir the cooked seafood into the lobster cream sauce until well combined. Transfer the mixture to a greased baking dish. Top with shredded mozzarella and provolone cheese.

    Bake

    Preheat the oven to 375°F (190°C). Bake the seafood au gratin for 20-25 minutes or until the cheese is bubbly and golden brown.

    Remove from the oven, garnish with chopped parsley, and serve hot.
