For the Salmon

    Prep the Salmon

    Preheat the oven to 375°F (190°C). Wrap each salmon fillet with two slices of bacon and secure with toothpicks if necessary.

    Prepare the Sauce

    In a skillet over medium heat, add olive oil, walnuts, sun-dried tomatoes, salt, and pepper. Sauté for about 3 minutes. Pour in the Amaretto and simmer until the sauce thickens slightly.

    Bake the Salmon

    Place the bacon-wrapped salmon on a baking sheet. Bake in the oven for 20-25 minutes or until the salmon is cooked through and the bacon is crispy.

For the Risotto

    Cook the Onions and Garlic

    In a large saucepan, melt butter over medium heat. Add the chopped onion and garlic, cooking until the onion is translucent.

    Toast the Rice

    Add the arborio rice to the saucepan and toast for about 2 minutes, stirring frequently.

    Add Liquid Gradually

    Pour in the white wine and cook until absorbed. Then, gradually add the chicken broth, one ladle at a time, stirring continuously until each addition is absorbed before adding the next.

    Finish the Risotto

    Once the rice is creamy and cooked al dente, stir in the parmesan cheese, salt, and pepper to taste.
