    Cook the Wild Rice

    In a medium saucepan, combine 1 cup of wild rice with 3 cups of water. Bring to a boil, then reduce heat, cover, and simmer for about 45 minutes or until tender. Drain any excess water and set aside.

    Prepare the Beef Tenderloin

    Preheat the oven to 400°F (200°C). Season the beef tenderloin with salt and black pepper. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sear the tenderloin on all sides until browned, about 3-4 minutes per side.

    Roast the Tenderloin

    Transfer the seared tenderloin to a baking dish and roast in the preheated oven for 20-25 minutes or until it reaches your desired doneness (medium-rare is about 130°F/54°C). Remove from the oven and let rest for 10 minutes.

    Sauté the Mushrooms

    In the same skillet used for the tenderloin, add the remaining tablespoon of olive oil and sauté the sliced mushrooms and minced garlic over medium heat until the mushrooms are browned and tender, about 5-7 minutes.

    Prepare the Horseradish Sauce

    In a small bowl, combine the prepared horseradish with sour cream. Mix well and adjust seasoning to taste.

    Serve

    Slice the rested tenderloin into medallions. Serve over a bed of wild rice, topped with sautéed mushrooms and a dollop of horseradish sauce.
