    Prepare the Oysters

    Rinse the oysters under cold water and pat dry with paper towels. Season with salt and black pepper.

    Dredging Setup

    In one bowl, place the all-purpose flour. In a second bowl, whisk together the eggs and buttermilk. In a third bowl, place the cornmeal.

    Coat the Oysters

    Dredge each oyster first in the flour, then dip in the egg mixture, and finally coat with cornmeal. Make sure each oyster is thoroughly coated.

    Fry the Oysters

    Heat the vegetable oil in a deep frying pan over medium-high heat. Once hot, carefully add the oysters in batches and fry until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

    Prepare the Hoagies

    While the oysters are frying, slice the hoagie rolls in half and lightly toast them on a grill or in the oven.

    Assemble the Po'Boy

    Spread a generous amount of remoulade sauce on the inside of each hoagie roll. Layer with shredded lettuce, fried oysters, sliced tomatoes, and additional remoulade, if desired.

    Serve

    Close the hoagie rolls and serve immediately with extra remoulade on the side.
