Prepare the fries
Peel and cut the potatoes into thick fries. Rinse them under cold water and pat dry.

Fry the potatoes
Heat oil in a deep fryer or large pot to 350°F (175°C). Add the fries in batches and fry until golden brown, about 5-7 minutes. Remove and drain on paper towels. Season with salt.

Make the chipotle tartar sauce
In a bowl, mix mayonnaise, chopped chipotle peppers, and lemon juice. Stir until well combined. Adjust seasoning to taste.

Prepare the batter
In a separate bowl, whisk together flour, cornstarch, baking powder, salt, black pepper, and cold beer until smooth.

Fry the walleye
Dip each walleye fillet into the batter, ensuring it is fully coated. Carefully place the battered fillets into the hot oil and fry until golden brown and cooked through, approximately 4-5 minutes. Remove and drain on paper towels.

Plate the fried walleye with a side of fries and serve with chipotle tartar sauce.
