Method

Marinate the Chicken

  1. 1

    Prepare the Marinade

In a large bowl, combine buttermilk, hot sauce, garlic powder, paprika, salt, and black pepper. Whisk until well mixed.

  2. 2

    Marinate the Chicken

Add chicken thighs to the marinade, ensuring they are fully submerged. Cover and refrigerate for at least 4 hours, preferably overnight.

Prepare the Breading

  1. 3

    Mix Dry Ingredients

In a shallow dish, combine all-purpose flour, cornstarch, cayenne pepper, and salt. Mix well.

Fry the Chicken

  1. 4

    Heat Oil

In a large skillet, heat oil over medium-high heat until it reaches 350°F (175°C).

  2. 5

    Bread the Chicken

Remove chicken from marinade, shaking off excess. Dredge each piece in the flour mixture, ensuring an even coating.

  3. 6

    Fry the Chicken

Fry the chicken pieces in hot oil for about 6-8 minutes per side, or until golden brown and cooked through. Remove and drain on paper towels.

Make the Dab Sauce

  1. 7

    Mix Sauce Ingredients

In a bowl, mix mayonnaise, hot sauce, and lemon juice until smooth.

Assemble the Sandwich

  1. 8

    Build the Sandwich

Spread a generous amount of Dab sauce on the bottom half of each bun. Place a piece of fried chicken on top, followed by coleslaw and pickles. Top with the other half of the bun.
