Prepare the Batter
In a mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add the golden ale beer, mixing until smooth and free of lumps. Let the batter rest for about 15 minutes.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; if it sizzles and rises to the surface, it's ready.

Fry the Fish
Dip each Wild Alaska Pollock fillet into the batter, allowing excess to drip off. Carefully place the battered fish into the hot oil, frying in batches to avoid overcrowding. Fry for about 4-5 minutes or until golden brown and crispy. Remove and drain on paper towels.

Cook the Fries
In the same hot oil, add the frozen fries or chips and cook according to package instructions until golden and crispy. Drain on paper towels.

Serve
Arrange the fried fish and fries on a plate. Serve with coleslaw on the side, if desired. Enjoy your Fish & Chips!
