    Prepare the Potatoes

    Wash and peel the potatoes. Use a mandoline slicer or a sharp knife to slice the potatoes thinly, about 1/8 inch thick.

    Soak the Slices

    Place the potato slices in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes the chips crispier.

    Preheat the Oil

    In a large pot or deep fryer, heat the olive oil to 350°F (175°C).

    Fry the Chips

    Using a slotted spoon, carefully add a handful of potato slices to the hot oil. Fry in batches until golden brown and crispy, about 3-5 minutes.

    Drain and Season

    Remove the chips with the slotted spoon and place them on paper towels to drain excess oil. While still hot, sprinkle with salt, paprika, garlic powder, and black pepper to taste.
