    Prepare the Roast

    Season the chuck roast with salt and black pepper. Heat olive oil in a large skillet over medium-high heat and sear the roast on all sides until browned. Remove from skillet and set aside.

    Cook the Onions and Garlic

    In the same skillet, add the chopped onion and minced garlic. Sauté for about 5 minutes until the onion is translucent.

    Slow Cook the Beef

    Place the seared roast in a slow cooker. Add the sautéed onions and garlic, beef broth, and barbecue sauce. Cover and cook on low for 8 hours, or until the beef is tender and easily shredded.

    Shred the Beef

    Once cooked, remove the beef from the slow cooker and shred it using two forks. Return the shredded beef to the slow cooker and mix it with the sauce.

    Assemble the Dish

    Preheat your oven to 350°F (175°C). Spread the shredded barbecue beef mixture into a baking dish. Top with cheddar and mozzarella cheeses.

    Bake

    Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
