Preparation

    Prepare the Spinach

    Wash the fresh spinach thoroughly under running water to remove any dirt. Drain well and set aside.

    Prepare the Veal

    Season the veal medallions with salt and black pepper on both sides. Allow them to rest for about 10 minutes at room temperature.

    Mince the Garlic

    Peel and mince the garlic cloves finely. Set aside.

Cooking

    Sauté the Spinach

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the washed spinach and sauté for about 2-3 minutes until wilted. Season with a pinch of salt and set aside on a plate.

    Cook the Veal

    In the same skillet, add the remaining olive oil and 2 tablespoons of butter. Once the butter has melted and is bubbling, add the seasoned veal medallions. Cook for about 3-4 minutes on each side until they are golden brown and cooked through.

    Add Garlic

    In the last minute of cooking the veal, add the minced garlic and remaining butter to the skillet. Sauté for about 1 minute until the garlic is fragrant but not browned.

    Finish the Dish

    Drizzle the lemon juice over the veal medallions. Serve the veal hot over the sautéed spinach, spooning some of the garlic butter from the skillet over the top.
