Method

Prepare the Steak

  1. 1

    Season the Steak

Take the porterhouse steak and pat it dry with paper towels. Generously season both sides with salt, black pepper, garlic powder, and onion powder. Let the steak sit at room temperature for about 30 minutes to allow the seasoning to penetrate.

  2. 2

    Preheat the Grill or Oven

Preheat your grill to high heat or your oven to 450°F (232°C). If using a grill, make sure the grates are clean and oiled.

Cook the Steak

  1. 3

    Sear the Steak

If using a grill, place the steak directly over the hottest part and sear for about 4-5 minutes on each side. For oven cooking, place the steak on a roasting pan and cook for about 5 minutes before flipping.

  2. 4

    Finish Cooking

After searing, reduce the grill heat to medium or transfer the steak to the cooler part of the grill or oven. Continue cooking until the internal temperature reaches your desired doneness (130°F for medium-rare, 140°F for medium).

Make the Herb Butter

  1. 5

    Combine Ingredients

In a mixing bowl, combine the softened unsalted butter, chopped rosemary, chopped thyme, and minced garlic. Mix well until fully incorporated.

  2. 6

    Chill the Butter

Transfer the herb butter mixture to a piece of parchment paper or plastic wrap, shape it into a log, and refrigerate for at least 30 minutes to firm up.

Serve the Steak

  1. 7

    Rest the Steak

Once the steak has reached the desired temperature, remove it from the grill/oven and let it rest for 10 minutes. This helps retain the juices.

  2. 8

    Slice and Serve

Slice the porterhouse steak against the grain and top with a generous dollop of herb butter. Garnish with chopped parsley and serve with lemon wedges on the side.
