Marinate the Steaks
In a small bowl, mix together olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper. Rub this marinade all over the cowboy ribeye steaks and place them in a large ziplock bag or a shallow dish. Seal or cover and refrigerate for at least 1 hour, preferably overnight.

Bring to Room Temperature
Remove the marinated steaks from the refrigerator and allow them to come to room temperature, about 30 minutes before cooking.

Preheat the Grill
Preheat your grill to high heat (about 450°F to 500°F).

Place the steaks on the grill and cook for 4-5 minutes on one side. Flip the steaks and cook for an additional 4-5 minutes for medium-rare, or until the desired doneness is reached.

If using, add a tablespoon of butter on top of each steak during the last minute of cooking. This will melt and add rich flavor to the meat.
