Preparation of the Veal

    Using a meat mallet, gently pound each veal cutlet until they are about 1/2 inch thick. This will help them cook evenly and remain tender.

Breading Process

    Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs mixed with Italian seasoning.

    Dredge each veal cutlet in flour, shaking off any excess. Dip into the beaten eggs, allowing the excess to drip off, and then coat with the breadcrumb mixture, pressing gently to adhere.

Cooking the Sauce
