Cooking Pasta

Boil the Pasta
In a large pot, bring water to a boil. Add 1 teaspoon of salt. Once boiling, add 2 cups of penne pasta and cook according to package instructions until al dente, typically about 8-10 minutes. Drain and set aside.
Preparing Vegetables

Chop the Vegetables
While the pasta is cooking, dice the medium onion and zucchini. Mince the garlic cloves and chop the fresh tomatoes.
Cooking the Sauce

Sauté the Vegetables
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté for about 2-3 minutes until translucent. Then add the minced garlic and diced zucchini, cooking for another 4-5 minutes until the zucchini is tender.

Add Tomatoes
Stir in the chopped fresh tomatoes and season with salt and black pepper to taste. Let the mixture simmer for about 5 minutes, allowing the tomatoes to soften and release their juices.
