Prepare Chicken Cutlet

Pound the Chicken
Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch using a meat mallet.

Bread the Chicken
Dredge each chicken breast in flour, shaking off the excess, then dip in the beaten eggs, and finally coat with bread crumbs.

Fry the Chicken
In a large skillet, heat olive oil over medium heat. Once hot, fry the breaded chicken cutlets for about 4-5 minutes on each side until golden brown and cooked through. Remove and set aside on a paper towel to drain excess oil.

Layer the Ingredients
On each chicken cutlet, layer 1 slice of prosciutto and 2 oz of fresh mozzarella. Place under the broiler for 2-3 minutes until the cheese is melted and bubbly.

Assemble the Dish
Place the chicken cutlets on serving plates, top with sautéed broccoli rabe, and drizzle with olive oil and red wine vinegar. Season with additional salt and pepper to taste.
