Stuffed Salmon Preparation

Prepare the Filling
In a mixing bowl, combine the seafood stuffing mix, chopped shrimp, softened cream cheese, chopped parsley, lemon juice, salt, and black pepper. Mix until well combined.

Prepare the Salmon
Make a slit in each salmon fillet to create a pocket for the stuffing. Be careful not to cut all the way through.

Stuff the Salmon
Spoon the stuffing mixture into each salmon pocket, filling them generously.
Cooking the Salmon

Sear the Salmon
In a large skillet over medium-high heat, add a bit of olive oil. Once hot, add the stuffed salmon fillets, cooking for about 4-5 minutes on each side or until cooked through and golden brown.

Make the Sauce
In the same skillet used for the salmon, reduce heat to medium. Add butter and minced garlic, sautéing until fragrant (about 1 minute). Pour in chicken broth, lemon zest, and lemon juice. Simmer for 3-4 minutes until slightly thickened.

Cook the Rice
In a medium saucepan, bring water and salt to a boil. Add the rice, reduce heat to low, cover, and simmer for about 18-20 minutes or until the rice is tender and water is absorbed.
